Lucknowi fennel seeds are from India. They are about half in size to standard fennel seeds, bright green in colour, and have an intense anise flavour with mild licorice overtones.

Fennel Seed 60g

Fennel seeds have a strong anise flavour that has a warm, menthol like taste. The greener the seeds, the better the quality. In Indian and Asian cooking, the seeds are almost always roasted, giving them a sweet, spicy flavour. Ground fennel seeds may also be roasted. Once the fennel changes colour, and releases a strong scent, remove from heat and add to dishes such as curries or satay sauces. Also used in soups, breads, pasta and tomato dishes and pickles.

Fenugreek Seed 100g

Fenugreek seeds are often included in curry powders, giving them a slight bitter taste as in vindaloo curries. Always add small amounts as the bitterness can be overpowering. Can be used as a sprouting seed, and is used as an extract in making artificial maple syrup. Ground fenugreek seeds can be added to mayonnaise as a substitute for mustard powder, giving a similar taste without the heat.

File` powder is made from the young leaves of the Sassafras tree. The most popular use for file` powder is as a thickening agent when making a Creole dish called Gumbo. Dark green in colour, with a mild flavour similar in tast to a herb mixture where marjoram and thyme dominate.
