Sweet basil is the most popular variety of basil. To make dried basil taste closer to fresh, mix 1 tsp. basil to 1/2 tsp. lemon juice. Basil is the ultimate compliment to tomatoes, aswell as garlic and olives.

Bay Leaves (TAS) 6g

The bay leaves we have are Tasmanian grown. They are large in size and deep green in colour. Pick fresh, and hung up to dry. Use in slow cooking dishes, such as soups, casseroles and stews. If cooking for four, use no more than 2-3 bay leaves as the flavour is quite strong.

Chervil 20g

Chervil is often referred to as gourmet's parsley, or French parsley. Use the same way you would parsley, it won't dominate a dish, but it will enhance the flavour of other herbs. Best added in the last 10-15 minutes of cooking. Dried chervil should be dark green in colour.

Fresh coriander leaves are best bought with the roots still attatched, they will last longer, and are used in Asian cooking. Add fresh coriander leaves in the last 5 minutes of cooking to get the best flavour. Most popular in indian, Asian, Mexican and Middle Eastern cooking. Although I have it on just about everything!

Galangal Fresh $39.00 Kg

The fresh galangal that we stock is also known as greater galangal. Galangal comes from the ginger family. It is mostly used in South East Asian cooking, particularly Thai food. It has a tangy, biting taste, and will be found with lemongrass and kaffir lime leaves in Thai hot and sour soups, sambals, and many seafood dishes and stir-frys. Scrape or cut off the skin, and grate or finely slice.

It is clearly recognisable by its deep purple colour, and has an intense flavour far superior to ordinary garlic.
