Satay Powder 70g

Made here at Spice World, this satay powder is of medium heat with an aromatic flavour. Consisting of coriander, lemon grass, cardamom, galangal, star anise, turmeric, chilli powder and sesame seed. Coat kg. of cubed chicken or beef with 2 tbsp. of satay powder and stand for half an hour. Fry garlic and onion, add chicken and coconut milk for a basic satay curry. Be adventerous and add fresh lemongrass, galangal and kaffir lime leaves, along with snow peas to your dish.

Sichuan Pepper 40g

Sichuan pepper is the dried berries of the prickly ash tree native to Sichuan, the south east province of China. They have a warm, peppery taste with citris notes. The tangy flavour of sichuan compliments rich fatty meats such as duck and pork. It is also an ingredient of the Japanese spice blend sichimi togaroshi. The leaves from the prickly ash tree are sansho leaves, which are used to season noodle dishes and spicy soups.

Spanish Saffron 1gm.

Saffron is the dark orange-red stamen of a mauve, autumn flowering crocus. It is hand picked and labour intensive. You need over 500 000 stamens to make just 1kg. of saffron. This is why saffron is the most expensive spice in the world and should be used sparingly. Saffron is appreciated for its delicate, yet distinctive flavour and striking colour. Some traditional uses are for Indian rice dishes, French soup bouillabaisse, Spanish paellas and saffron cakes and buns. Saffron threads are infused in water overnight to release its colour and flavour. The liquid and the strands are usually added towards the end of the cooking process.

Sumac Ground 70g

The sumac tree bears red berries for culinary use. When they are ground, the outer skin is removed. Salt is added to enhance the flavour. Sumac is a souring agent which can be used in place of lemon juice. It has a unique, sweet tangy flavour. Compliments tomatoes especially well, and is delicious with lamb, chicken and fish. Good quality ground sumac should be deep red to burgandy in colour. Deep coloured moist sumac is a good indicator that less stem and seed is used.
