Nigella Seeds 70g

Nigella seed is a small coal black tear shaped seed. It is often incorrectly referred to as black cumin seed and black onion seed. True black cumin seed (shah jeera) has a completely different taste, and true onion seeds have little flavour, and are mainly used for sprouting purposes. You will often find nigella seeds on top of turkish bread and naan bread. An essential ingredient of panch phoran, and is especially nice with carbohydrates as there flavour complements them.

Nutmeg Whole 30g

Whole nutmeg is the hard kernal of an evergreen tree. Ground or grated fresh nutmeg is used to flavour puddings, cakes, biscuits, breads, milk based puddeings, cream saauces and soups to name a few. The oil present in nutmeg contains small amounts of myristicin and elemicin, which are narcotic and poisonous, so it must be used sparingly. This also applies to mace.

Paprika Smoked Sweet 70g Tin

Sweet smoked paprika comes from the Le Vera region in Spain. There are three types of this sesational paprika. Dulce (sweet) has a sweet, smoky flavour, and is deep red in colour. Agridulce (bittersweet) has a sharp, bittersweet flavour, and the colour is similar to dulce. Picante (hot) has a distinct bitterness with a lingering heat similar to a mild chilli powder, yet with a smoky flavour. Smoked paprika should always be used sparingly as the flavour is quite intense. Use in soups and casseroles. It is great added to mayonnaise along with coriander powder, lemon juice and garlic for seafood dipping sauce. Also sprinkled on grilled cheese on toast and poached eggs.

Paprika Spanish 70g

Coming from the capsicum family, spanish paprika is a sweet, mild paprika which is deep red in colour. Spanish paprika generally come from small round capsicums. Used in the Spanish sauce Romesco to give its colour and depth., and always an ingredient in paella. Whatever your favourite sweet paprika may be (spanish or hungarian), it has the same flavour profile as chilli without the heat. The addition of paprika will tone the heat if you have added to much chilli powder to a dish.
