Whole cloves are the dried, unopened flower buds of a small evergreen tree. The aroma of cloves is intense. A warm, sweet, slightly peppery taste with a numbing effect. Whole cloves are used in stewed fruit, baked ham, pickles, and the essential component of a pomander. (Orange clove). When used sparingly, cloes bring a pleasing freshness and sweet spicy flavour to food.

Coriander Seed 50g

A very useful spice to have in the kitchen. It is nearly impossible to use to much coriander seed. Coriander mixes well with both sweet and savoury spice blends, balnacing out the sweeter and more pungent flavours. An important ingredient in curry powders, mixed spice and moroccan spice blends. To reduce the heat in a curry powder, add a considerable amount of ground coriander seed compared to chilli powder. Some recipes will call for lightly roasted coriander seeds before grinding. This changes the flavour and is popular in many Indian, Asian and North African recipes. Never roast the seeds for sweets such as cakes, pies and fruit dishes.

Cumin Seed 60g

Cumin is used extensively in Indian curries, breads, rice, pickles and chutneys. Also popular in Middle Eastern dishes, especially lamb, as it compliments it so well, and is an ingredient of Dukkah, Chermoula and Harissa. Dry roasting cumin seeds or powder brings out a pleasant nutty flavour, and reduces some of its bitterness. Although it is best not to roast when using cumin in Mexican dishes or mild chicken and seafood dishes as it will remove some of the most delicate notes.

Dukkah is an Ethiopian blend of roasted nuts, seasoned with spices. The most popular use for dukkah is to take turkish bread, or any crusty bread, break of a piece, dip it in olive oil, then dip into the dukkah. Also goes well as a rub for chicken and fish and is nice sprinkled over salads.

Fennel Lucknowi 60g

Lucknowi fennel seeds are from India. They are about half in size to standard fennel seeds, bright green in colour, and have an intense anise flavour with mild licorice overtones.

Fennel Seed 60g

Fennel seeds have a strong anise flavour that has a warm, menthol like taste. The greener the seeds, the better the quality. In Indian and Asian cooking, the seeds are almost always roasted, giving them a sweet, spicy flavour. Ground fennel seeds may also be roasted. Once the fennel changes colour, and releases a strong scent, remove from heat and add to dishes such as curries or satay sauces. Also used in soups, breads, pasta and tomato dishes and pickles.
