Annatto Seed 50gAnnatto seeds are from a small evergreen tree native to the Caribbean, Mexico, Central and South America. A natural colour, E1606, is made from annotto. It has no adverse effects, and has become widely popular in food manuffacturing as an alternative to artificial vcolours. Its primary use is as a colouring in fish, rice and vegetable dishes. The chinese use annatto to colour roast and preserved meats such as roast pork. To colour seafood, rice and vegetable dishes, make an infusion of 1/2 tsp. of annatto seeds to 2 tbsp. of water and simmer slightly for a few minutes. To colour curries or brush onto meats, simply add 1/2 tsp. annatto seeds to 2 tbsp. olive oil and heat for a few minutes, making sure you don't burn the seeds. Allow to cool and drain the oil from the seeds and store in an airtight jar for up to12 months. |
